Hog Roast PortlandWhat better way to bring the team together than with a feast of bold flavours, smoky meats, and hearty sides? We were delighted to join the brilliant crew at Tods Defence in Portland for a relaxed and delicious corporate gathering, serving up our Southern Slow Roast Menu to nearly 200 guests.

With Catering Manager Jack leading the way, we fired up the smokers and slow-roasted a mouth-watering trio of meats. The menu featured our signature Texan 24-Hour Beef Brisket, meltingly tender and packed with flavour, alongside Cajun-Spiced Whole Roast Chickens with just the right amount of heat, and our much-loved Louisiana Sticky Pork Ribs, cooked until they quite literally fell off the bone.

Guests could tuck into soft bread rolls and wraps – wholemeal and gluten-free included – and dress their dishes with a selection of sauces, from a sweet smokey BBQ glaze to a fiery Cajun hot pepper sauce, plus our legendary hickory bourbon BBQ for that extra kick.

Hog Roast PortlandWe made sure our vegetarian and vegan guests were well looked after too. They had the choice between our homemade Grilled Vegetable and Halloumi Skewers (or a dairy-free version), served with wraps, tzatziki and sweet chilli sauce, or our sticky Vegan Pulled Jackfruit Buns, served with a crunchy, zingy slaw. Both options were a hit.

On the side, we served a vibrant Greek salad, ultra-comforting mac & cheese, and a crowd-pleasing mix of sweet potato and traditional fries. Everything was served using eco-friendly bamboo crockery and wooden cutlery, keeping the service slick, simple, and sustainable.

It was a pleasure to be part of such a well-run event, with great people and even better vibes. Here’s to more unforgettable corporate celebrations in Dorset – and plenty more BBQ!
